Lavender Metheglin

Ingredients

  • 3 lbs Moorland New England Wildflower honey
  • 1 oz dried lavender blossoms
  • 1/4 tsp citric acid
  • 1/2 tsp tannin
  • 1 tsp Yeastex nutrient
  • filtered water
  • Pasteur Champagne Yeast

Instructions

Boil honey + 1/2 gallon water for 10 minutes. Put blossoms, citric acid, tannin, and nutrient in carboy. Pour hot honey mixture into carboy, top with water. Add yeast at room temp.
