A conifer metheglin
Crush juniper berries with a mortar and pestle
Boil honey, berries, and some water for 10 minutes
Skim foam, pour through strainer into carboy. Top up w/water. Add yeast and nutrient when cool.

Very dry. Still quite pine-y, but has mellowed considerably, and tastes like it will mellow very nicely past this. Will make good gifts.
