Vegetable Cheese Soup

Ingredients

  • 2 Tbsp butter
  • 1/4 c chopped onion
  • 2 Tbsp flour
  • 1/2 c diced celery
  • 1/2 c green pepper
  • 1 1/2 c diced red potatoes
  • 2 c vegetable stock
  • 2 c milk
  • 1 c green peas
  • 1 tsp Dijon mustard
  • 2 Tbsp sherry
  • 1 c cherry tomatoes
  • 1 1/2 c grated cheddar cheese
  • 1/2 c carrots

Instructions

  1. Heat butter in large saucepan. Add onion and cook 5 minutes until clear. Sprinkle with flour and cook, stiring for 3-4 minutes.
  2. Add celery, carrots, green pepper, potatoes, stock. Salt & pepper to taste. Stirk and bring to boil. Reduce heat & simmer 15-20 minutes until vegetables are soft. Add milk, peas, mustard, sherry, and cherry tomatoes. Simmer for 5 minutes.
  3. Remove from heat. Stir in cheese. Serve.
