Vegetable Cheese Soup
Ingredients
- 2 Tbsp butter
- 1/4 c chopped onion
- 2 Tbsp flour
- 1/2 c diced celery
- 1/2 c green pepper
- 1 1/2 c diced red potatoes
- 2 c vegetable stock
- 2 c milk
- 1 c green peas
- 1 tsp Dijon mustard
- 2 Tbsp sherry
- 1 c cherry tomatoes
- 1 1/2 c grated cheddar cheese
- 1/2 c carrots
Instructions
- Heat butter in large saucepan. Add onion and cook 5 minutes until
clear. Sprinkle with flour and cook, stiring for 3-4 minutes.
- Add celery, carrots, green pepper, potatoes, stock. Salt & pepper to
taste. Stirk and bring to boil. Reduce heat & simmer 15-20 minutes until
vegetables are soft. Add milk, peas, mustard, sherry, and cherry tomatoes.
Simmer for 5 minutes.
- Remove from heat. Stir in cheese. Serve.
